Overview:
Since 1995 The Blue Star restaurant has been the place to eat
dinner in Colorado Springs. Innovative, unique food, a world-class wine list,
and exceptional service have won The Blue Star local, regional, and national
acclaim. Our motto of "Intense Attentiveness" reflects our belief that to be
the best and to remain the best requires constant maintenance and focus on
providing the best experience to each guest, every time they visit. With three
separate dining areas, each with a different ambience and feel, The Blue Star
offers a variety of experiences that suit all occasions, from a quick beer and
a burger after work, to formal multi-course celebration dinners with
exceptional wine, to private dining in our wine cellar.

History
Joseph Coleman Jr., a local waiter who strongly believed that Colorado Springs
was ready for something new, opened The Blue Star in the summer of 1995. Fine
steaks and classical fine dining were already here, but there was very little
new, innovative, or cosmopolitan. Local critics decried this new restaurant as
trendy and gave it little chance of making it a year. Three years later The
Blue Star outgrew its original location in Old Colorado City and moved to its
present location south of downtown; and loyal patrons followed. Critics still
say we are trendy, but after this long it's the kind of trend we can live
with.
